Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups stone
  • ground grits
  • 4 cups whole milk
  • 1 tbsp unsalted butter
  • 3 cups sharp cheddar cheese, shredded
  • 2 tbsp cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring milk to a simmer over medium heat. Slowly pour in the grits while continuously stirring. Reduce heat to low and cook for 15 minutes or until the consistency thickens, stirring occasionally.
  2. Stir in butter and half of the shredded cheddar cheese, allowing it to melt completely. Season with salt and pepper. Cover and keep warm.
  3. In a large bowl, toss shrimp with cajun seasoning.
  4. Heat olive oil in a grill pan or cast iron skillet over medium high heat. Add shrimp and cook for 2 3 minutes per side or until pink and cooked through. Transfer to a plate and keep warm.
  5. To serve, scoop a generous portion of the creamy grits onto each plate and top with seared shrimp. Sprinkle with remaining cheddar cheese.

Chef’s Insight

The key to perfect grits is to stir constantly and allow them to thicken gradually, which ensures a creamy consistency.

Notes

For a spicier dish, add more cajun seasoning to the shrimp and grits.
