Ingredients
- 2 lbs beef sirloin or chicken breasts, thinly sliced
- 1 large onion, thinly sliced
- 3 bell peppers (red, yellow, and green), thinly sliced
- 12 small corn tortillas
- 4 oz shredded cheese (cheddar or Monterey Jack)
- 1 lime, cut into wedges
- 1/2 cup fresh cilantro leaves
- Salt and pepper, to taste
Instructions
- Season the meat with salt and pepper to taste. Heat a large cast iron skillet over high heat. Add the meat, onion, and bell peppers in batches if needed, cooking until browned and tender. Remove from heat and cover to keep warm.
- Warm tortillas on a grill or directly over a flame for 10 seconds per side. Keep warm in a clean kitchen towel.
- To assemble tacos, place cooked meat mixture onto warmed tortillas, top with cheese, and fold in half.
- Serve immediately with lime wedges, cilantro leaves, and additional toppings such as salsa or guacamole, if desired.
Chef’s Insight
To add more flavor, marinate the meat in advance using a blend of chili powder, garlic, onion powder, and cumin.
Notes
For a spicy twist, add sliced jalapeños or serranos to the meat and vegetable mixture before cooking.
