  • range chicken, cut into 8 pieces
  • 1 medium
  • sized head of cauliflower, florets removed and saved for later use
  • 1/2 cup grass
  • fed unsalted butter
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 3 tbsp sweet paprika
  • 1 tbsp hot paprika
  • 2 cups full
  • fat coconut milk
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Begin by making the cauliflower mash. In a large pot, boil the cauliflower florets in salted water until they are tender. Drain well and return them to the pot. Add 3 tablespoons of butter and mash until smooth. Season with salt and pepper. Keep warm and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onion and garlic and sauté until they are soft and golden brown.

  5. Pour in the coconut milk and chicken broth. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 30 minutes or until the chicken is cooked through and tender.
  6. Remove the chicken from the skillet and keep it warm. Continue to cook the sauce over medium heat until it thickens slightly. Season with salt and pepper to taste.
