Ingredients
4 large bell peppers (green, red, or orange)
1 lb ground beef or turkey
1 packet taco seasoning
1 can black beans (15 oz), rinsed and drained
2 cups shredded Mexican cheese blend
1 cup corn
1/2 cup diced onion
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/4 cup sour cream
Salt and pepper, to taste
Instructions
Preheat the grill to medium high heat (about 350°F).
Cut the tops off the bell peppers and remove seeds and membranes. Grill peppers for 5 minutes or until slightly charred, turning occasionally. Remove from grill and set aside.
In a large skillet, cook ground meat with taco seasoning according to package instructions. Add black beans, onion, tomatoes, corn, and cilantro cook for another 5 minutes. Season with salt and pepper.
Stuff each pepper with the cooked meat mixture, then top with shredded cheese.
Return stuffed peppers to the grill and cook until cheese is melted and bubbly, about 7 10 minutes.
