Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 1 cup mango salsa
  • 1 cup crumbled feta cheese

Instructions

  1. In a large bowl, combine shrimp, olive oil, garlic, paprika, cumin, red pepper flakes, salt and pepper. Mix well to coat the shrimp evenly with the spices. Let marinate for 20 30 minutes.
  2. Preheat grill or grill pan over medium high heat. Grill the marinated shrimp for about 2 minutes per side, or until cooked through and slightly charred. Remove from heat and keep warm.
  3. Warm corn tortillas on grill or in a dry skillet for 10 seconds on each side.
  4. Assemble tacos by placing two grilled shrimp on each tortilla, topping with mango salsa, crumbled feta cheese, and a sprinkle of fresh cilantro. Serve immediately!
