  • 6 slices bacon
  • 1/4 cup pure maple syrup

Instructions

  1. In a large skillet, cook the bacon over medium heat until crisp. Remove from pan and chop into small pieces.
  2. In a small bowl, whisk together the maple syrup, brown sugar, smoked paprika, and cayenne pepper (if using). Set aside.
  3. In another large skillet or deep fryer, heat 1 to 2 inches of oil to 350°F.
  4. In a medium bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt. In another bowl, combine the egg, milk, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Dip each frankfurter into the batter, coating completely, then carefully lower them into the hot oil. Fry for 3 4 minutes per dog, or until golden brown and cooked through, turning occasionally for even cooking. Remove from oil with a slotted spoon and drain on paper towels.
  6. Brush the warm corn dogs with maple bacon relish and serve immediately.
