  • 1. 6 fresh ears of corn, husked and cleaned 2. 1/4 cup unsalted butter, softened 3. 2 tablespoons crumbled cotija cheese 4. 1 teaspoon ground chipotle pepper 5. 1 teaspoon lime zest 6. 1 tablespoon fresh lime juice 7. 1/4 cup mayonnaise 8. 1/4 teaspoon salt 9. 1/4 teaspoon black pepper 10. Fresh cilantro leaves, for garnish

Instructions

  1. Preheat the grill to medium high heat and lightly oil the grate.
  2. In a small bowl, mix together butter, cotija cheese, ground chipotle pepper, lime zest, and mayonnaise. Set aside.
  3. Season corn with salt and black pepper. Grill corn, turning occasionally, until slightly charred on all sides, about 8 10 minutes.
  4. Remove corn from grill and spread the smoky chipotle butter evenly over each ear of corn. Return to the grill for 2 minutes or until butter is melted and sizzling.
  5. Remove from grill and sprinkle with fresh lime juice. Garnish with cilantro leaves.
