  • 2 cups pineapple chunks
  • 1/4 cup white vinegar

  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 8 small corn tortillas
  • 1 cup diced red onion

  • 1 jalapeno, thinly sliced
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, combine pork, vinegar, achiote powder, oregano, cumin, salt, pepper, cinnamon, and cloves. Mix well and marinate for at least 30 minutes.
  2. Thread the marinated pork onto skewers along with pineapple chunks. Preheat a grill or grill pan to medium high heat.
  3. Grill the skewered pork and pineapple for about 4 6 minutes per side, or until cooked through and charred.
  4. Remove from the grill and let rest for a few minutes. Slice the grilled pork into thin strips.
