Ingredients

  • 1 lb chicken breasts or thighs, cubed
  • 2 bell peppers (red and yellow), sliced
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained
  • 4 oz cream cheese, cut into small cubes
  • 8 oz shredded cheddar cheese
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño pepper, sliced (optional)
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. In a large skillet or grill pan over medium high heat, add enough olive oil to coat the surface. Season chicken with salt and pepper, and once the pan is hot, cook the chicken until browned on all sides and cooked through. Remove from the pan and set aside.
  2. In the same pan, add the sliced bell peppers and chopped onion, cooking until they begin to soften and develop a slight char.
  3. Stir in the taco seasoning and cook for 1 2 minutes to release the flavors.
  4. Add black beans, corn kernels, salsa, and cooked chicken back into the pan, stirring well to combine.
  5. Top the mixture with cream cheese cubes, spreading them out evenly over the surface. Cover and let cook for a few minutes until the cheese begins to melt.
  6. Sprinkle shredded cheddar cheese on top of the melting cream cheese. Cover and allow it to melt completely.
  7. In a small bowl, mix together sour cream and chopped cilantro. Spoon dollops of this mixture onto the skillet, creating swirls of green among the cheeses.
  8. If using jalapeño slices, arrange them around the skillet for added heat and visual appeal.
  9. Serve immediately, directly from the skillet to create an unforgettable dining experience.
