This recipe is a twist on the famous Mexican street corn, or "Elote," adapted for home cooks to enjoy in their own kitchen. Inspired by nostalgia and perfect for Friday night tailgates!
2 ears fresh corn on the cob, husks removed and cleaned
1/4 cup mayonnaise
1/4 cup crumbled feta cheese
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
1/4 cup chopped fresh cilantro
Juice of 1 lime
2 tablespoons unsalted butter
Instructions
Preheat a grill or stovetop griddle to medium heat.
In a small bowl, mix together the mayonnaise, feta cheese, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Set aside.
Brush the corn with lime juice and season with salt and pepper to taste. Place the corn directly onto the grill or griddle and cook for 6 8 minutes, turning occasionally until lightly charred on all sides.
Remove corn from heat and immediately brush each ear with butter. Spread the spiced mayonnaise mixture evenly over the top of each ear of corn.
Sprinkle crumbled feta cheese generously over the mayo covered corn, followed by a sprinkling of fresh cilantro. Serve warm and enjoy!
