Ingredients

  • 2 cans (14 oz each) young green jackfruit in water, drained and rinsed
  • 2 cups homemade smoky BBQ sauce (recipe below)
  • 8 slider buns
  • 2 cups jalapeño coleslaw (recipe below) Homemade Smoky BBQ Sauce:
  • 1 cup ketchup
  • 1/2 cup water
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons molasses
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon liquid smoke
  • Salt and pepper, to taste Jalapeño Coleslaw:
  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup thinly sliced jalapeños
  • 1/2 cup mayonnaise
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Salt and pepper, to taste

Instructions

  1. In a large saucepan, combine all the ingredients for the homemade smoky BBQ sauce over medium heat. Bring the mixture to a simmer, stirring occasionally. Once simmering, reduce the heat to low and let it cook for 15 minutes, stirring occasionally. Remove from heat and set aside.
  2. In a large bowl, combine the shredded cabbage and jalapeños for the coleslaw. In another bowl, whisk together the mayonnaise, rice vinegar, sugar, salt, and pepper until well combined. Pour the dressing over the cabbage mixture and toss to coat evenly. Cover and refrigerate until ready to serve.
  3. Drain and rinse the jackfruit thoroughly. In a large bowl, toss the jackfruit with 1 cup of the smoky BBQ sauce until well coated. Heat a grill or grill pan over medium high heat. Grill the jackfruit for 2 3 minutes per side or until slightly charred and heated through.
  4. Assemble the sliders by placing a portion of the BBQ'd jackfruit on the bottom half of each slider bun, followed by a generous scoop of jalapeño coleslaw, and finally, the top half of the bun. Serve immediately and enjoy!
