  • 1. 2 lbs boneless pork shoulder 2. 1 cup BBQ sauce (store
  • bought or homemade) 3. 6 corn tortillas 4. 1 cup coleslaw mix 5. 1/4 cup chopped cilantro 6. 1/4 cup crumbled cotija cheese 7. 2 tbsp vegetable oil 8. 1 medium onion, thinly sliced 9. 3 cloves garlic, minced 10. Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium high heat. Add onions and sauté until softened.
  2. Stir in garlic and cook for an additional minute.
  3. Season pork shoulder generously with salt and pepper, then add it to the pot. Cook, stirring occasionally, until browned on all sides.
  4. Pour BBQ sauce over the pork and bring to a boil. Reduce heat, cover, and let simmer for 1 2 hours or until the meat is tender and pulls apart easily with a fork.
  5. Remove pork from pot and shred using two forks. Return shredded pork to the sauce and stir well.
  6. Warm tortillas in a dry pan or microwave. Add pulled pork, coleslaw mix, cilantro, and cotija cheese on top.
  7. Serve immediately.
