  • 4 pounds beef short ribs 2 cups BBQ sauce (homemade or store

Instructions

  1. Soak applewood chips in water for at least 30 minutes.
  2. Preheat your grill to medium high heat, around 350°F (176°C).
  3. Season the short ribs with salt and pepper. Place them directly on the grill grate and cook for 5 minutes per side.
  4. Reduce the grill temperature to low, around 225°F (108°C), and add the soaked applewood chips. Cook the short ribs for 3 hours, basting with BBQ sauce every hour.
  5. While the short ribs are cooking, prepare the coleslaw and pickles.
  6. In the last 2 minutes of cooking, place a slice of smoked Gouda on each rib. Close the grill lid and allow it to melt.
  7. Remove the ribs from the grill and let them rest for 5 minutes before slicing.
  8. Assemble the sliders by placing a rib on each bun, topped with coleslaw and pickles.
