  • 2 lbs beef brisket
  • 1/4 cup Smoky Carolina BBQ rub
  • 2 tbsp vegetable oil
  • 6 rye bread slices
  • 1 1/2 cups sauerkraut, drained
  • 6 Swiss cheese slices
  • Russian dressing, to taste

Instructions

  1. Preheat your grill or smoker to 250°F (120°C).
  2. Rub the brisket with the Smoky Carolina BBQ rub and let it rest for 30 minutes.
  3. Place the brisket on the grill grates, fat side up, and cook for 4 5 hours or until tender and reaches an internal temperature of 195°F (90°C). Wrap in foil if needed to prevent drying out.
  4. In a large skillet, heat the vegetable oil over medium heat and sear the brisket on both sides for 2 minutes each.
  5. Slice the seared brisket into 1/2 inch thick pieces and set aside.
  6. Assemble the sliders by layering sliced brisket, sauerkraut, Swiss cheese, and Russian dressing between rye bread slices.
  7. Grill the sandwiches for 2 3 minutes per side or until the cheese is melted and the bread is toasted.
