Ingredients

  • 2 lbs. boneless pork shoulder, cut into 1
  • inch cubes
  • 1 cup BBQ Smoky Chipotle sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 slider buns
  • 1 large onion, thinly sliced
  • 4 oz Colby Jack cheese, shredded
  • 1 tbsp vegetable oil
  • 1 tbsp butter

Instructions

  1. In a large bowl, combine pork cubes, BBQ Smoky Chipotle sauce, salt, and black pepper. Mix well and let marinate for at least 30 minutes.
  2. Preheat your grill or grill pan to medium high heat.
  3. Remove the pork from the marinade, letting any excess drip off.
  4. Grill the pork cubes for 5 6 minutes per side, or until cooked through and slightly charred.
  5. In a separate pan, melt butter over medium heat. Add sliced onions and cook until caramelized, stirring occasionally (about 10 12 minutes).
  6. To assemble sliders, place two pork cubes on the bottom half of each slider bun, top with caramelized onions and a generous sprinkle of Colby Jack cheese. Add the top half of the bun and serve immediately.

Chef’s Insight

To get that perfect smoky char, don't be afraid to crank up the heat slightly on your grill or grill pan. But keep an eye on those pork cubes! You want them just barely charred and cooked through.
