Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup bourbon
  • 1/4 cup chipotle peppers in adobo sauce
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 1/4 cup cilantro, finely chopped
  • 2 tbsp olive oil
  • 8 wooden skewers

Instructions

  1. In a blender or food processor, combine bourbon, chipotle peppers, honey, soy sauce, lime juice, and half of the cilantro. Blend until smooth.
  2. Place shrimp in a large bowl and pour the blended sauce over them. Toss to coat evenly and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Preheat grill or grill pan to medium high heat. Remove shrimp from marinade, letting excess drip off. Thread 4 5 shrimp onto each skewer and brush with olive oil.
  4. Grill shrimp skewers for 2 3 minutes per side until pink and cooked through. Garnish with remaining cilantro and serve immediately.

To add an extra smoky flavor, use mesquite wood chips when grilling.
