  • 6 small tortillas

Instructions

  1. In a medium sized saucepan, combine the shredded sharp cheddar cheese, cream cheese, diced green chiles, chopped fresh cilantro, sour cream, chopped chipotle peppers in adobo sauce, ground cumin, and garlic powder. Heat over low heat, stirring constantly until the cheeses are fully melted and incorporated. Season with salt and pepper to taste.
  2. Remove the cheese mixture from heat and set aside. Preheat your grill to medium high heat.
  3. Cut each tortilla into 8 triangles. Lightly spray or brush one side of each triangle with cooking spray or oil. Place them on the preheated grill, oiled side down. Grill for 1 2 minutes until they're slightly crispy and golden brown, then flip them over and repeat. Remove from the grill and let them cool on a wire rack.
  4. Transfer the cheese dip to a heatproof serving dish and serve immediately with the grilled tortilla strips. Enjoy!
