  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mayonnaise
  • 2 tablespoons adobo sauce from canned chipotles in adobo
  • 1 teaspoon ground chipotle powder
  • 1 cup crumbled queso fresco or feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat the grill to medium high heat. Brush the corn with melted butter and season with salt and pepper. Grill the corn, turning occasionally, until tender and slightly charred, about 10 minutes.
  2. In a small bowl, mix together the mayonnaise, adobo sauce, and ground chipotle powder. Set aside.
  3. Remove the corn from the grill and brush with the spicy chipotle cream sauce. Then sprinkle with queso fresco or feta cheese and cilantro. Squeeze a lime wedge over each ear of corn and serve immediately.
