Ingredients

  • 4 large ears of corn, shucked and cleaned
  • 1/2 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce, pureed
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons finely sliced green onions
  • Zest and juice of 1 lime

Instructions

  1. Preheat a grill or grill pan over medium high heat.
  2. In a small bowl, whisk together the mayonnaise, pureed chipotle pepper, smoked paprika, ground cumin, salt, and black pepper until well combined. Set aside.
  3. Grill the corn, turning occasionally, until slightly charred on all sides, about 8 10 minutes.
  4. Remove corn from grill and immediately brush with the chipotle mayo mixture, making sure to cover all surfaces evenly.
  5. Sprinkle crumbled feta cheese over the corn, followed by chopped cilantro, green onions, and lime zest. Squeeze lime juice over each ear of corn.
  6. Serve immediately and enjoy!

For a more authentic experience, grill the corn in its husks, then remove the husks before applying the chipotle mayo sauce.
