  • 4 large ears of corn, husked and cleaned
  • 3 tablespoons butter, melted
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 lime, zested and juiced
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons thinly sliced green onions

Instructions

  1. Preheat a grill or grill pan to medium high heat.
  2. In a small bowl, combine the melted butter, chipotle chili powder, smoked paprika, salt, and pepper.
  3. Brush each ear of corn with the seasoned butter mixture.
  4. Grill the corn for 8 10 minutes, turning occasionally, until charred and tender.
  5. In another small bowl, mix together the sour cream, lime zest and juice.
  6. Remove the corn from the grill and spread each ear with a generous dollop of the lime crema.
  7. Sprinkle cotija cheese over the top and garnish with cilantro and green onions.
