1. 12 large jalapeños 2. 4 oz cream cheese, softened 3. 1 cup shredded smoked cheddar cheese 4. 1/2 cup crushed pork rinds 5. 1 tsp garlic powder 6. 1 tsp onion powder 7. Salt and pepper, to taste 8. 2 tbsp finely chopped chives
Instructions
Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper.
Cut the jalapeños in half lengthwise and remove seeds and membranes.
In a bowl, mix together the softened cream cheese, shredded smoked cheddar cheese, crushed pork rinds, garlic powder, onion powder, salt, and pepper until well combined.
Stuff each jalapeño half with the cheese mixture, pressing gently to ensure it stays in place.
Arrange the stuffed jalapeños on the prepared baking sheet, seam side down.
Bake for 20 25 minutes or until the cheese is melted and bubbly, and the tops are golden brown.
Remove from the oven and let cool slightly. Sprinkle each jalapeño with chives before serving.
Chef’s Insight
The key to this dish is finding jalapeños that are the perfect size and have just the right amount of heat. You want them big enough to stuff but not so large they become overwhelmingly spicy.
Notes
For an extra smoky flavor, try using smoked mozzarella cheese instead of cheddar. You can also experiment with different types of BBQ seasoning to customize the flavor profile.
