Smoky Pork Belly Bites with Sweet Chili Dipping Sauce

Ingredients

  • 2 lbs pork belly, cut into 1
  • inch cubes
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp ground black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 cup Sweet Chili Dipping Sauce (see recipe below) Sweet Chili Dipping Sauce:
  • 1/2 cup rice vinegar
  • 1/4 cup granulated sugar
  • 1 tbsp chili garlic sauce
  • 1 tsp cornstarch
  • 1/4 cup water

Instructions

  1. In a large bowl, whisk together brown sugar, soy sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper (if using).
  2. Add the pork belly cubes to the marinade and toss until evenly coated. Cover and refrigerate for at least 2 hours or up to overnight.
  3. Preheat your outdoor grill or stovetop grill pan to medium high heat. Grill the marinated pork belly cubes, turning occasionally, until they are crispy on the outside and cooked through (165°F internally). This should take about 8 10 minutes total cooking time.
  4. While the pork belly is grilling, prepare the Sweet Chili Dipping Sauce by whisking together rice vinegar, granulated sugar, chili garlic sauce, cornstarch, and water in a small saucepan. Bring to a boil over medium heat, then reduce the heat and simmer for 2 minutes until thickened. Set aside to cool.
  5. Transfer the grilled pork belly bites to a serving platter and serve with Sweet Chili Dipping Sauce on the side. Enjoy!
