Instructions

  1. In a large bowl, combine corn kernels, shredded cheese, diced jalapeno, flour, milk, beaten egg, baking powder, salt, and pepper. Mix well until all ingredients are incorporated.
  2. Heat oil in a deep frying pan or skillet to 350°F (175°C).
  3. Using a tablespoon or ice cream scoop, carefully drop spoonfuls of the corn mixture into the hot oil, being careful not to overcrowd the pan. Fry for 2 3 minutes per side or until golden brown and crispy.
  4. Remove fritters from the oil using a slotted spoon and transfer to a paper towel lined plate to drain excess oil.
  5. In a small bowl, whisk together honey and cayenne pepper.
  6. Serve fritters warm, drizzled with the spicy honey mixture and garnished with sliced green onions if desired.
