Salt and pepper, to taste Smoky Southern BBQ Sauce: 1. 1 cup ketchup 2. 1/2 cup apple cider vinegar 3. 1/4 cup brown sugar 4. 1/4 cup molasses 5. 2 tablespoons Worcestershire sauce 6. 2 tablespoons Dijon mustard 7. 1 teaspoon smoked paprika 8. 1 teaspoon garlic powder 9. 1 teaspoon onion powder 10. 1/2 teaspoon cayenne pepper

Instructions

  1. Preheat your grill to medium high heat.
  2. In a small bowl, whisk together the ingredients for the Smoky Southern BBQ Sauce. Set aside.
  3. Season pork chops with salt and pepper on both sides. Grill for 4 minutes per side or until cooked through. During the last 2 minutes of grilling, baste the pork chops with the BBQ sauce, flipping once to ensure even coating. Remove from grill and let rest for 5 minutes.
  4. In a large bowl, toss together peaches, corn, red onion, and cherry tomatoes with salt and pepper to taste. Grill vegetables for 2 3 minutes or until slightly charred.
  5. Assemble your sandwiches by placing a grilled pork chop on the bottom half of each bun, followed by a generous scoop of the grilled fruit and vegetable mix. Top with arugula, crumbled blue cheese, and the top half of the bun.

Chef’s Insight

Allow the pork chops to rest before slicing, as this will make them more tender and juicy.

Notes

Don't skimp on the BBQ sauce - a generous coating will make all the difference in flavor.
