  • 6 ears of corn, husked and cleaned 4 tablespoons smoky spice blend (paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper) 1/4 cup melted unsalted butter 2 limes, zested and juiced Fresh cilantro leaves, for garnish

Instructions

  1. Preheat your grill to medium high heat (about 350°F).
  2. In a small bowl, combine the spice blend ingredients. Set aside.
  3. Brush each ear of corn with melted butter and sprinkle generously with the smoky spice blend.
  4. Grill the corn for 10 12 minutes, turning every few minutes to ensure even charring and cooking. The corn should be tender yet slightly crisp when done.
  5. Remove from grill and let cool for a minute before cutting off the cob.
  6. In a large bowl, toss the cut corn with lime zest and juice. Garnish with fresh cilantro leaves and serve immediately.
