Ingredients
- 4 large ears of corn, shucked 2 tablespoons olive oil 1 teaspoon chili powder Salt and pepper to taste 1/2 cup mayonnaise 2 tablespoons finely chopped chipotle peppers in adobo sauce 1 tablespoon fresh lime juice 1 tablespoon chopped fresh cilantro
Instructions
- Preheat grill to medium high heat.
- Brush corn with olive oil and season with chili powder, salt, and pepper.
- Grill corn for 8 10 minutes, turning occasionally, until kernels are tender and slightly charred.
- Meanwhile, in a small bowl, mix together mayonnaise, chopped chipotle peppers, lime juice, and cilantro.
- Remove corn from grill and immediately spread chipotle aioli over each ear of corn. Serve warm.
Chef’s Insight
To add more smokiness, let the corn sit wrapped in foil for 5 minutes after grilling before spreading the aioli.
