  • bought or homemade) 1/4 cup taco seasoning (homemade or store
  • bought) 1/4 cup olive oil 8 oz cream cheese, softened 1/2 cup fresh cilantro, chopped 2 ripe mangoes, diced 1/2 red onion, finely chopped 1 jalapeño, finely chopped (optional) 2 tablespoons lime juice Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium high heat. Brush tortillas with olive oil on both sides and sprinkle with taco seasoning. Grill until slightly crispy and charred, about 30 seconds per side. Set aside.
  2. In a large bowl, mix together the shredded chicken or pork with cream cheese and half of the chopped cilantro. Season with salt and pepper to taste. Set aside.
  3. In another bowl, combine mango, red onion, jalapeño (if using), lime juice, and remaining cilantro. Season with salt and pepper to taste. Set aside.
  4. Assemble tacos by spreading a generous layer of the chicken or pork mixture onto each grilled tortilla. Top with mango salsa and serve immediately. Enjoy!
