  • 1. 2 large bell peppers (green, red, and yellow) 2. 1 large onion 3. 1 lb chicken breasts or flank steak 4. 1/4 cup Tex
  • Mex seasoning blend 5. 1 tbsp olive oil 6. 8 small flour tortillas 7. 1 avocado, sliced 8. 1/2 cup cherry tomatoes, halved 9. 1/2 cup sour cream 10. 1/4 cup shredded cheddar cheese 11. 1 lime, cut into wedges

Instructions

  1. Prepare the grill for medium high heat.
  2. Cut the bell peppers and onion into thin strips.
  3. Slice the chicken breasts or flank steak into thin strips.
  4. Season the chicken or beef with Tex Mex seasoning blend.
  5. In a large bowl, toss the vegetables and seasoned meat with olive oil.
  6. Grill the meat for 4 6 minutes per side until cooked through. Remove from grill and let rest for 5 minutes.
  7. Grill the vegetables for 2 3 minutes or until tender.
  8. Warm the tortillas on the grill for about 1 minute per side.
