400g Pork Loin 2 Sweet Potatoes 1 Red Onion 2 Carrots Handful of Fresh Herbs (Rosemary and Thyme) Garlic Clove Extra Virgin Olive Oil Salt and Black Pepper Lemon Juice Balsamic Vinegar
Instructions
Preheat the grill to medium high heat, approximately 20 minutes before cooking.
In a mixing bowl, combine the juice of one lemon, two tablespoons of extra virgin olive oil, minced garlic, finely chopped rosemary and thyme leaves, salt, and black pepper.
Score the pork loin for even absorption of flavors and place it in a shallow dish. Pour the marinade over the pork loin, ensuring complete coverage. Cover and refrigerate for at least 30 minutes.
Peel and dice the sweet potatoes into bite sized cubes. In a separate bowl, combine diced red onion, carrots, and fresh herbs. Toss with extra virgin olive oil, lemon juice, salt, black pepper, balsamic vinegar, and toss well.
Grill the marinated pork loin for 15 20 minutes, flipping halfway through to ensure even cooking. Let it rest for a few minutes before slicing.
Serve the sliced grilled pork loin alongside the sweet potato salad and garlic herb sauce, garnished with fresh herbs.
