1 large head of romaine lettuce, chopped
2 medium sweet potatoes, cubed
1 ripe avocado, sliced
1/4 cup grated Parmesan cheese

Instructions
Preheat your grill or grill pan to medium high heat. Season the chicken thighs with salt and pepper, then brush with olive oil. Grill for 6 7 minutes per side, or until cooked through. Allow to rest for a few minutes before slicing.
Toss the chopped romaine lettuce with Caesar dressing.
In a separate pan, toss the cubed sweet potatoes in olive oil and seasonings, then roast in the oven at 400°F (205°C) for about 20 minutes or until golden brown.
To assemble, layer the grilled chicken over the dressed lettuce, add the roasted sweet potatoes, avocado slices, and sprinkle with Parmesan cheese.
