Instructions

  1. Combine the flour, buttermilk, egg, sugar, salt, vegetable oil, baking soda, and baking powder in a mixing bowl. Mix until just combined. Heat a non stick skillet or griddle over medium heat. Grease lightly with butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges are slightly firm, about 2 3 minutes per side. Repeat for all pancakes. While pancakes are cooking, fry country ham slices in a separate pan until crispy and golden brown. Set aside. To serve, stack two to three pancakes on each plate and top with a few slices of the fried country ham. Drizzle with maple syrup and enjoy!
