Ingredients
- 1 lb pork shoulder, cut into 1
- inch cubes
- 2 cups applewood chips, soaked in water for 30 minutes
- 1 cup barbecue sauce
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp smoked paprika
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground
- 4 hamburger buns, split and toasted
- Coleslaw, for serving
Instructions
- Preheat your grill or smoker to medium high heat (about 350°F). Add the applewood chips to create a smoky ambiance.
- In a small bowl, whisk together barbecue sauce, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, garlic powder, onion powder, salt, and black pepper. This will be your Smoky Mountain Snack glaze.
- Thread the pork cubes onto skewers or place them directly on the grill grates. Grill or smoke the pork until cooked through and slightly charred, about 10 12 minutes, turning occasionally.
- Brush the pork with the Smoky Mountain Snack glaze during the last few minutes of cooking to achieve that glossy and charred contrast.
- Remove the pork from the grill and let it rest for a few minutes. Drizzle any remaining glaze over the top.
- Assemble your Smoky Mountain Snack by placing a generous portion of grilled pork on the bottom half of each toasted bun, adding a dollop of coleslaw, and then finishing with the top half of the bun.
- Serve immediately and enjoy!
