  • 10 Medjool dates, pitted
  • 4 large eggs
  • 1/2 cup almond butter
  • 1/4 cup coconut flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1/4 cup chopped nuts (almonds or walnuts), optional

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9 inch cake pan and line it with parchment paper.
  2. In a food processor, blend dates until they form a paste. Add eggs one by one, processing after each addition. Then, add almond butter and process until well combined.
  3. In a separate bowl, whisk together coconut flour, cinnamon, cardamom, ginger, cloves, sea salt, and baking soda. Gradually add the dry mixture to the wet mixture in the food processor. Mix in apple cider vinegar and blend until smooth. If using, fold in the chopped nuts.
  4. Pour the batter into the prepared cake pan and bake for 25 30 minutes or until a toothpick inserted comes out clean.
