Ingredients
- 1. 4 large ears of corn, shucked 2. 1/2 cup mayonnaise 3. 1/2 cup crumbled blue cheese 4. 2 teaspoons ground cayenne pepper 5. 2 teaspoons smoked paprika 6. 1/2 teaspoon garlic powder 7. Salt and freshly ground black pepper, to taste 8. 4 tablespoons unsalted butter, melted 9. 4 limes, cut into wedges 10. Fresh cilantro leaves, for garnish
Instructions
- In a small bowl, mix together the mayonnaise, blue cheese, cayenne pepper, smoked paprika, garlic powder, salt, and black pepper. Set aside.
- Preheat your grill to medium high heat or prepare a charcoal grill and let the coals turn white.
- Brush each ear of corn with melted butter and season with salt and pepper.
- Grill the corn on all sides, turning every few minutes, until slightly charred and tender, about 10 12 minutes.
- Remove the corn from the grill and immediately brush each ear with the spicy blue cheese mixture, distributing it evenly.
- Squeeze lime juice over the top of each cob and garnish with fresh cilantro leaves.
- Serve immediately.
