  • 4 large ears of corn, husked and cleaned 1/4 cup mayonnaise 1/4 cup crumbled cotija cheese 2 tablespoons chopped fresh cilantro 1 lime, zested and juiced 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/2 teaspoon smoked paprika Salt and black pepper, to taste 8 small corn or flour tortillas Optional: hot sauce, sour cream, avocado slices, pickled onions

Instructions

  1. Preheat the grill or griddle pan over medium high heat.
  2. In a small bowl, mix together mayonnaise, cotija cheese, cilantro, lime zest and juice, chili powder, ground cumin, smoked paprika, salt, and black pepper. Set aside.
  3. Brush corn with some of the spicy mayo mixture and grill until lightly charred and tender, about 8 10 minutes, turning occasionally. Remove from the grill and let cool slightly.
  4. Assemble tacos by spreading remaining spicy mayo mixture on each tortilla, layering grilled corn, hot sauce, sour cream, avocado slices, and pickled onions if desired. Fold in half or roll up and serve immediately.
