  • 4 large collard green leaves, washed and dried
  • 1/2 cup almond flour
  • 1/4 cup coconut oil
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the almond flour and spices (smoked paprika, ground cumin, ground coriander, chili powder, garlic powder, salt, and pepper). Mix well to ensure even distribution of flavors.
  2. Heat coconut oil in a large skillet over medium heat.
  3. Dredge each chicken piece in the spiced almond flour mixture, ensuring it's fully coated.
  4. Carefully place the coated chicken pieces into the hot skillet and cook for 6 7 minutes, or until golden brown and cooked through. Turn frequently to ensure even cooking.
  5. Remove cooked chicken from the skillet and let cool slightly.
  6. Lay collard green leaves flat on a serving platter.
  7. Place a chicken piece in the center of each leaf and roll into a tight bundle. Secure with a toothpick if necessary.
  8. Garnish with fresh cilantro leaves (optional). Serve immediately and enjoy!
