12 oz firm tofu 4 red bell peppers 4 yellow bell peppers 4 green bell peppers 2 tbsp olive oil 1 tsp smoked paprika 1/2 tsp ground cumin Salt and black pepper, to taste 2 cups fresh mango, diced 1/2 cup red onion, finely chopped 1/4 cup fresh cilantro, chopped 1 lime, juiced 1 tbsp honey or agave syrup 1 tsp chili powder 1/2 tsp ground coriander 1/2 tsp ground ginger
Instructions
a. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. b. Slice the tofu into 24 even pieces and press gently to remove excess moisture. Place on the prepared baking sheet. c. Roast the tofu in the preheated oven for 15 minutes, turning halfway through. d. While the tofu is roasting, prepare the bell peppers by cutting off the tops and removing seeds and membranes. Cut into 24 even pieces. e. In a small bowl, mix together smoked paprika, ground cumin, salt, and black pepper. Remove tofu from oven and brush with olive oil, then sprinkle with the spice mixture. Return to oven for an additional 5 minutes. f. Arrange roasted bell pepper pieces around the tofu bites on a platter. g. In a separate bowl, combine diced mango, red onion, cilantro, lime juice, honey or agave syrup, chili powder, ground coriander, and ground ginger. Mix well and season with salt and black pepper to taste. h. Spoon mango salsa onto each bell pepper piece, placing one on top of each tofu bite.
