Instructions

  1. In a small saucepan, combine the rose petals and 1 cup of water. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and let steep for 30 minutes.
  2. Strain the rose infused water through a fine mesh sieve into a clean bowl, discarding the rose petals. Return the infused water to the saucepan.
  3. Add the sugar and lemon juice to the saucepan, stirring until the sugar has dissolved completely. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes to create a syrup. Remove from heat and let cool.
  4. In two tall glasses, pour 1/2 cup of the cooled rose syrup into each glass. Top with 1 cup of chilled sparkling water in each glass. Stir gently to combine.
  5. Garnish with fresh mint leaves and serve immediately.
