  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar

  • 2 cups wood chips, soaked (hickory or oak recommended)

Instructions

  1. Preheat a gas or charcoal grill to medium high heat (around 400°F). Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, combine barbecue sauce, pureed chipotle peppers, apple cider vinegar, and brown sugar. Stir until well combined. Set aside.
  3. Thread the beef cubes onto the soaked skewers, leaving some space between each piece for even cooking.
  4. Place the skewers on the preheated grill and cook for 2 3 minutes per side, or until desired doneness is reached. Brush with the chipotle BBQ sauce during the last minute of cooking.
  5. Meanwhile, place the pineapple rings on another part of the grill, cooking for 2 3 minutes per side until caramelized and slightly charred. Remove from heat.
  6. Serve the skewers over the grilled pineapple rings, drizzled with extra chipotle BBQ sauce if desired.
