Ingredients

  • 6 lbs pork spare ribs, cut into individual ribs
  • 1 cup apple cider vinegar
  • 1/2 cup packed brown sugar
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1/4 cup Worcestershire sauce
  • 1/4 cup yellow mustard
  • 1/4 cup ketchup
  • 1/4 cup hot sauce
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • Salt, to taste

Instructions

  1. In a large bowl, whisk together apple cider vinegar, brown sugar, molasses, honey, Worcestershire sauce, yellow mustard, ketchup, hot sauce, lemon juice, garlic, smoked paprika, ground cumin, chili powder, black pepper, and onion powder until well combined.
  2. Season the ribs generously with salt and add them to a large resealable plastic bag. Pour half of the BBQ sauce mixture into the bag and massage it onto the ribs, ensuring they are evenly coated. Refrigerate for at least 4 hours or overnight for best results.
  3. Preheat your grill to medium high heat (about 375°F). Remove the ribs from the marinade and discard any excess sauce in the bag. Grill the ribs over indirect heat, with the lid on the grill, for about 1 hour or until they reach an internal temperature of 160°F.
  4. Meanwhile, pour the remaining BBQ sauce into a saucepan and bring it to a simmer over medium heat. Cook for 10 minutes, stirring occasionally, then remove from heat and set aside.
  5. After the ribs have reached an internal temperature of 160°F, move them to direct heat on the grill, basting them with the prepared BBQ sauce, and continue to cook for an additional 10 15 minutes or until the desired level of charring is achieved.
  6. Remove the ribs from the grill, let them rest for a few minutes, then slice into individual bones. Serve hot, garnished with fresh parsley if desired.

Chef’s Insight

For an added smoky flavor, consider soaking wood chips in water before placing them on the grill to create a more authentic barbecue experience.

Notes

For a spicier dish, increase the amount of hot sauce used in the marinade.
