Instructions

  1. In a large bowl, combine soy sauce, rice vinegar, brown sugar, cumin, smoked paprika, cayenne pepper, black pepper, and salt to create the marinade. Add chicken cubes and toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  2. Preheat grill to medium high heat. Thread marinated chicken onto skewers, discarding marinade.
  3. Grill skewers for 4 5 minutes per side, or until cooked through and slightly charred.
  4. While chicken cooks, prepare the mango sauce by combining diced mango, pineapple juice, lime juice, honey, and minced garlic in a blender. Blend until smooth, then transfer to a serving dish.
  5. Remove skewers from grill and immediately brush with mango sauce. Garnish with cilantro leaves and serve with lime wedges on the side.
