Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a medium bowl, whisk together honey, soy sauce, apple cider vinegar, brown sugar, smoked paprika, chili powder, ground cumin, garlic powder, salt, and pepper to create the marinade.
  3. Cut chicken into bite sized pieces and add to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours or overnight.
  4. Preheat grill or grill pan to medium high heat. Remove chicken from marinade, allowing excess to drip off. Thread marinated chicken, red onion wedges, green bell pepper chunks, and pineapple chunks onto soaked skewers.
  5. Grill skewers for 6 8 minutes per side or until cooked through, basting with remaining marinade as needed.
