Instructions
In a large bowl, combine the olive oil, paprika, brown sugar, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Mix well to create a smooth dry rub.
Add the chicken wings to the bowl and toss until evenly coated in the spice mixture. Allow the wings to marinate for at least 30 minutes or up to overnight in the refrigerator.
Preheat your grill or smoker to medium high heat, around 375°F (190°C). Cook the chicken wings on the grill or smoker until they are cooked through and have a deep golden brown char, about 20 25 minutes, turning occasionally.
While the wings are cooking, prepare the blue cheese dip by combining the crumbled blue cheese, buttermilk, mayonnaise, Worcestershire sauce, hot sauce (if using), salt, and pepper in a mixing bowl. Stir until well combined. Refrigerate until ready to serve.
Once the wings are cooked, remove from heat and let them rest for a few minutes before serving with the blue cheese dip on the side.
