Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1/2 cup of CookJunkie's Secret Blend Seasoning (3 tbsp paprika, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp ground black pepper, 1 tsp cayenne pepper)
  • 4 slices of Texas toast bread
  • 8 oz. of sharp cheddar cheese, shredded
  • 2 cups of fresh spinach leaves
  • 3/4 cup of CookJunkie's Firecracker Sauce (1/2 cup of your favorite hot sauce, 1/4 cup of honey, and a dash of apple cider vinegar)
  • 1 tbsp unsalted butter, melted

Instructions

  1. Begin by preparing the chicken breasts. Season each breast generously with the Secret Blend Seasoning, ensuring full coverage.
  2. Preheat your grill or stovetop to medium high heat. Once hot, add the seasoned chicken breasts and cook for 6 minutes per side or until cooked through. Remove from heat and let rest for a few minutes before slicing.
  3. Grill or toast the Texas toast bread on both sides until golden brown.
  4. In a small saucepan, combine the ingredients for the Firecracker Sauce, and simmer gently until well combined.
  5. To assemble the appetizer, start by spreading a generous amount of Firecracker Sauce onto each slice of grilled Texas toast bread. Then layer on fresh spinach leaves, followed by sliced chicken breasts. Finally, top with shredded sharp cheddar cheese.
  6. Return the assembled dishes to your preheated grill or broiler for 2 3 minutes or until the cheese is melted and bubbly. Remove from heat and serve immediately.
