  • 1 lb pork carnitas 2 cups BBQ sauce (your choice) 8 small corn tortillas 1 cup crumbled queso fresco 1/2 cup chopped cilantro 1/2 cup diced red onion 1 lime, cut into wedges 2 tbsp vegetable oil 1 tsp ground cumin 1 tsp smoked paprika 1/2 tsp garlic powder Salt and pepper, to taste

Instructions

  1. In a large bowl, combine pork carnitas, BBQ sauce, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well and set aside.
  2. In a pan over medium high heat, warm tortillas for 30 seconds on each side. Keep them warm in a clean kitchen towel.
  3. Heat vegetable oil in a large skillet or grill over medium high heat. Add the marinated pork mixture and cook until browned and heated through, about 5 7 minutes.
  4. Assemble tacos by placing a scoop of pork mixture onto each warm tortilla, followed by queso fresco, cilantro, and red onion. Serve with lime wedges.
