  • roasted corn
  • 1/4 cup finely chopped cilantro
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup sour cream
  • 2 limes, cut into wedges
  • Salsa, for serving

Instructions

  1. Preheat a large griddle or skillet over medium heat.
  2. Lay out half of the flour tortillas on a flat surface.
  3. Evenly distribute the shredded Monterey Jack cheese on each tortilla, leaving a small border around the edges.
  4. Add a layer of cooked and seasoned carnitas, black beans, fire roasted corn, and cilantro on top of the cheese.
  5. Sprinkle Parmesan cheese over the ingredients.
  6. Place the remaining tortillas on top of each assembly to create sandwiches.
  7. Transfer the quesadilla sandwiches to the preheated griddle or skillet and cook for 2 3 minutes per side until golden brown and crispy.
  8. Remove from heat, let rest for 1 minute, then slice into wedges.
  9. Serve with sour cream, lime wedges, salsa, and enjoy!
