  • 6 large boneless, skinless chicken breasts 1/2 cup adobo sauce from canned chipotle peppers in adobo sauce 1/4 cup freshly squeezed lime juice 3 tablespoons olive oil 1 teaspoon ground cumin Salt and pepper, to taste 12 small corn tortillas 1/2 cup crumbled cotija cheese 1/2 cup thinly sliced red onion 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, combine the adobo sauce, lime juice, olive oil, cumin, salt, and pepper. Add the chicken breasts and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  2. Preheat an outdoor grill or grill pan to medium high heat. Remove the chicken from the marinade, letting excess liquid drip off. Grill the chicken for 5 7 minutes per side, or until fully cooked and charred on the outside. Remove from the grill and let rest for 5 minutes before slicing into thin strips.
  3. Warm the corn tortillas on the grill or in a dry pan for about 10 seconds per side. Assemble the tacos by layering chicken, cotija cheese, red onion, and cilantro on each tortilla. Serve immediately.
