Ingredients
- 8 oz boneless, skinless chicken breasts 1 red bell pepper, thinly sliced 1 yellow bell pepper, thinly sliced 1 large onion, thinly sliced 2 tablespoons olive oil 2 tablespoons taco seasoning 8 small flour tortillas 1 cup shredded cheddar cheese 1 cup sour cream 1 avocado, sliced
Instructions
- Slice the chicken into thin strips and marinate in half of the taco seasoning for 30 minutes.
- Heat olive oil in a large skillet over medium high heat. Add the marinated chicken and cook until golden brown. Remove from the pan and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until softened.
- Return the cooked chicken to the skillet and add the remaining taco seasoning. Stir well to combine.
- Warm the tortillas in a separate pan or microwave.
- Assemble the fajitas by adding chicken, vegetables, cheese, sour cream, and avocado slices to each tortilla.
