- 4 large russet potatoes, washed and sliced into thin fries
- Vegetable oil for frying
- 1/2 cup (120 ml) Firecracker Sauce (recipe below)
- 1/2 cup (120 g) crumbled blue cheese
- 1/4 cup (60 g) finely chopped chives
- Salt to taste Firecracker Sauce:
- 1/2 cup (120 ml) sriracha
- 1/2 cup (120 ml) mayonnaise
- 1 tbsp (15 ml) apple cider vinegar
- 1 tsp (5 g) garlic powder
- Salt to taste
Instructions
- Heat oil in a deep fryer or heavy pot to 325°F (163°C). Fry the potatoes in batches until golden brown and cooked through, about 4 5 minutes per batch. Remove from oil and drain on paper towels. Let cool.
- Preheat oven to 400°F (204°C). Spread fries on a baking sheet in a single layer. Bake for 10 12 minutes, or until crisp and golden brown. Remove from the oven and let cool slightly.
- In a small bowl, whisk together all Firecracker Sauce ingredients. Set aside.
- Toss hot fries with half of the Firecracker Sauce until evenly coated. Sprinkle crumbled blue cheese and chives over the top. Finish with salt to taste. Serve immediately.
