  • 6 medium russet potatoes
  • 2 cups shredded smoked Gouda cheese
  • 1 cup crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup finely chopped green onions
  • 1/4 cup barbecue sauce
  • Salt and pepper, to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork.
  3. Place potatoes on the grill or in the oven and cook for about 45 minutes, or until tender when pierced with a fork.
  4. While potatoes are cooking, mix together the shredded Gouda cheese, crumbled bacon, sour cream, green onions, and barbecue sauce in a bowl. Season with salt and pepper to taste.
  5. Once the potatoes are done, remove them from the grill or oven and let them cool slightly. Slice each potato in half lengthwise, but don't separate the halves.
  6. Using a spoon, scoop out some of the center flesh from each potato half to create a well for the filling.
  7. Fill each potato boat with the cheesy bacon mixture and return them to the grill or oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from heat, garnish with chopped parsley, and serve immediately.
